Honey-Ginger Syrup

A fresh, controlled syrup for Penicillin-style sours and alcohol-free highballs.

3 min read

01

Formula

Combine 200 g mild honey, 100 g hot water and 80 g thinly sliced fresh ginger. This yields roughly 300 ml after straining.

02

Method

Dissolve honey in hot—not boiling—water. Add ginger and steep covered for 20 minutes. Taste every five minutes after the first ten; strain when the heat is vivid but not harsh. Cool and bottle.

03

Storage and use

Refrigerate and use within two weeks. Discard on fermentation, pressure, mold or off aroma. Start with 15–22.5 ml in a sour and adjust for the honey's intensity.

Honey type, ginger cut and service trials

Light floral, chestnut and dark honeys give different intensity. Strong honey can obscure whisky fruit or smoke; establish a baseline with a mild type. Weighing reduces spoon residue losses. Warm water improves flow, while prolonged boiling can diminish fresh aroma; this is a sensory choice, not a medicinal treatment.

Wash ginger and standardize slice thickness. Grating or blending increases surface and extraction speed, so it cannot reuse a sliced-ginger timing unchanged. Fine residue can clog pourers and continue changing heat. Taste a small diluted sample to distinguish concentrated syrup intensity from its effect in a cocktail.

Test whisky, lemon and syrup together in a sour before evaluating any smoky float. Ginger remains warming in alcohol-free highballs. Fresh botanical additions mean sugar concentration alone is no storage guarantee. Record actual strained volume, ingredient mass and time instead of treating estimated yield as an inventory measurement.
